Birthday Bonanza: Pachakutiq Celebrates with New Fare

Welcome menu additions balance ceviche with more meat

If there's anything sweeter than a frosty pisco sour on a hot summer's day, it might just be the beaming smile of Pachakutiq co-owner Francisco Chia. When that dimpled smile pushes a "Pacha shot" -- a pisco double and a tall shot of "tiger's milk" ceviche marinade -- it's nearly irresistable. It may hinder your morning workout, but it's worth it.

Francisco (L) and a former president of Peru

... As is the new menu at this subterranean pop-up in Sanlitun SOHO's Flat White. Pachakutiq is celebrating one year of tasty business this Saturday, June 17, but some of the most delicious fare is brand new.

Nikudito delivers beef thinner than sashimi, unspeakably tender and far more delicious than the photo menu could describe. That yellow sauce is mouth-watering Peruvian cheese and their ubiquitous yellow pepper. You'll love it.

Unleash your carnivore for the tenderloin sushi -- this is fiesta-level excitement of flavor, pushing the hybrid culinary culture of Nikkei in its South American direction. Even the rice is infused with phenomenal flavor.

Acevichado falls apart deliciously with tender fish and rice. The citrus is twerked even harder from that famous tiger's milk.

An exceptional addition is the quinoa rissoto, tender and spicy with that yellow pepper. "Quinoa is from Peru!" Francisco reminds us. Cooked here with cream, milk, and basil, the savory comfort food outshines all other versions of the grain we've ever tried.

Watch out for oyster in the Tiger Roll, if you're allergic. Otherwise, leap for the sushi and sashimi. With spice and fire, cheese and beef, it's the best of globalization, right there in your tummy.

Though you might lose yourself at Pachakutiq's 1st birthday this Saturday ... or, no. You definitely will. Just remember: This color-drenched southern excursion isn't just an excuse to get lost in pitchers of pisco sour. It's a rewarding culinary experience in its own right.

Feliz cumpleaños!
