Michelin-starred Chef Mauro Colagreco presents his new winter menu with white truffles flown in from Álba, Italy. Available at Azur from October 31 until November 2, truffle lovers can get a feast on a seven-course menu for ¥1,888*.
Known as the “diamond of the kitchen”, white truffles are a rare ingredient that’s only available from mid-October to late December each year. This year, due to a lack of humidity, Álba was met with a low harvest season, making white truffles even more precious. Growing white truffle is very demanding and its limited production leads to its sky-high price. The name Álba will always pop up when white truffle is mentioned. This small town in northern Italy has long been regarded as one of the best white-truffle regions in the world since the 19th century. It is said that only a “star” chef can extricate the radiance of the “diamond” – white truffle. The strong-flavored white truffle needs to be espoused with different ingredients to bring out the best of its flavour.
Chef Mauro’s own restaurant Mirazur received its first Michelin start just ten months after opening back in 2006. They won their second Michelin star in 2012 and this year they’re ranked fourth place as the World’s 50 Best Restaurants. Chef Mauro mirrors the success of Mirazur at Azur, where he brings his zesty French style to Beijing’s food lovers.
For those who aren’t able to make it to Azur before November 2, fret not. Chef Mauro’s new winter menu is here to stay for the next few months. Azur’s kitchen will be cooking up its latest warm French dishes all winter long.
