Much like the sea breeze of its namesake, Purple Haze Bistro’s new “Dalian cocktail” packs a punch of cool refreshment. While the ingredients are simple, the magic lies in precise measurements. “There must be an exact balance to the ingredients, or the flavor changes completely,” explains owner Tobi Demker. With three parts gin, one part Midori and a splash of freshly-squeezed lemon juice, the mix is briefly shaken then poured into a high-ball glass over ice, topped with ginger ale and garnished with lime. Featuring the crisp bite of homemade lemonade, the drink is the perfect antidote to Beijing’s dry summer heat. At ¥30, it’s also one of the summer’s hottest bargains.
