Switzerland is known for a lot of things—the Alps, chocolate, watches, banking, Ringier (City Weekend’s parent company!) and neutrality, to name just a few. But our favorite thing about the country by far is the national dish—raclette. Café Swiss at the Swissotel offers a very authentic rendition for ¥178 per person. You’ll get a special raclette grill set up at your table, with individual trays to melt each slice of raclette cheese, as well as an upper level where you can grill meat and vegetable skewers, provided with the raclette. The important part is really the cheese, though. Once it starts to bubble, remove the tray and scrape the contents onto a small pile of baby potatoes with the little raclette spatula provided. Sprinkle on some paprika and you’ve got the perfect meal. Bring out the taste of the cheese and get in a serving of vegetables by adding some cherry tomatoes, cornichons and pickled onions, all served on the side. The price gets you unlimited refills of cheese and all the other ingredients, but we should warn you—this is a very filling dish. Open up a bottle of white wine, which goes extremely well with raclette, and get prepared for a long, cheesy meal.
