Tasting Food from a Gastronomic Great: Two-starred Michelin Chef Jean-Pierre Jacob Visits the Sofitel Wanda

Michelin starred Chef Jean-Pierre Jacob, head of alpine restaurant Le Bateau Ivre in Courchevel, is, for one week only, offering a unique menu at the Sofitel Wanda's Le Pre Lentore. CW had a chance to try Jacob's cooking, so here's a preview of what you'll be able to eat.

The sample five course gastronomic treat began with a scallop and salmon egg seafood broth (RMB148). This was followed by braised turbot, artichokes, spring onions and mushrooms in a lightly creamed fish stock (RMB248). The turbot was perfectly cooked, breaking apart at the slightest pressure, and the creamy, buttery fish stock provided a rich contrast to the lightness of the fish.

The next offering, a delicate roasted lobster served in coconut butter with fresh fig and banana fritters (RMB368) provided a taste experience that was far more reminiscent of South East Asia than the Chef’s European homeland. Despite the high quality of the food served throughout the meal, the lobster, due to its lightness and use of unique yet perfectly balanced flavors, stood out as dish of the day. The fourth course was a more typically European dish of tenderly roasted pigeon in cocotte with seasonal vegetables, asparagus, thinly sliced beetroot and bamboo shoots served in duck liver and beetroot consume (RMB198).

Dessert was half a caramelized meringue filled with pineapple sorbet and topped with pineapple sherbet (RMB118). The textures of the airy foam, viscous pineapple sorbet and the brittle meringue shell contrasted and complemented each other perfectly, providing a light and re-invigorating end to the meal.

Chef Jean-Pierre Jacob will be at La Pre Lentore for the remainder of this week where he is offering a special a la carte lunch, four course set (RMB488), ala carte and degustation (RMB888) and dinner menus. For more information, click here.
