Shanghai's Phillip Jallet of Bebemamie Yogurt indulges his two passions: conjuring magic and selling his home-style yogurt.

4.30a.m. Home

That first step onto a cold floor is tough.

5:00 Shower, dress.

5:10 Start work. The daily delivery sheets need to be updated. We currently deliver to about 3,000 customers over six weekdays.

5:15 A quick breakfast: bread, fruit and always yogurt!

5:30 Leave home.

Factory

5:45 Meet the delivery staff. Great care is taken loading the vehicles and assigning routes.

6:00 Phone ... check. Spectacles ... check. Wallet ... check. Yogurt ... check. Out the door!

6:10 Zip over the Nanpu Bridge under the first light of the morning. Beautiful!

6:15 See an ENTIRE PIG on the back of a moped! C'est impossible!

Seasons Villas' Market, Pudong

6:30 Set up our stall and await the rush. We also sell our yogurt at House of Flour and Slice Deli Jinqiao.

6:35 Dispatch a vehicle to begin deliveries to all the residences in Jinqiao.

6:57 Buy a chocolate tart from Le Marais and have a second breakfast. Don’t tell my wife!

7:00 Meet my regular clients and chat about the events of the day.

9:00 Pack our bags and set off on our door-to-door delivery route.

9:05 See the same guy with the pig on the moped! Are they lost?

9:10 Arrive at first compound.

9:30 Stop to chat with the guards. Good chaps.

10:21 Jump out of car, run up stairs.

10:22 Collect last week's jars from a customer and hand over fresh yogurt.

10:23 Run downstairs, jump in van.

10:40 Deliveries continue ...

12:30 p.m.

Finish deliveries.

1:05 Drop off empty jars for sterilization.

1:20 Arrive.

1:30 The best meal of the day: olives, fois gras, prosciutto. Ayi Lao adds suan miao shao rou and di san xian. Tres bien!

2:30 Sleep off my lunch.

4:00 Up to welcome my son Alex home from school.

4:17 Watch Alex play computer games.

4:30 Welcome my wife, Hano, back home.

5:00 Get a manicure (whether I’m conjuring magic tricks or selling yogurt, it’s important to be well presented).

5:20 Get a call from work.

5:40 Another work call. Write down cancellations and alterations with my free hand.

6:00 Hands look great, so it's time to prepare for my magic show. I run through my tricks repeatedly.

6:58 Get in the shower.

7:11 Out of the shower and wide awake.

7:30 Phone ... check. Wallet ... check. Cards ... check. Out the door!

7:50 Arrive. It’s a one-off private show for some friends and acquaintances from the expat community.

8:03 Chat with friends.

8:15 Approach my first group at the party.

8:18 Conjure for them. A few spectators gather ‘round.

8:28 Move on to the next group.

8:45 Meet some of my yogurt clients from this morning. They are a little surprised!

9:13 Having a great time. Cheese and wine? Don’t mind if I do!

9:35 A few more tricks for the attendees.

9:40 Chat about yogurt. Attract some new clients.

10:00 Time for my exit. Conjure a cab.
