Crisp white asparagus signals a succulent start to summer at Aria. A new Miniatures Menu from Chef de Cuisine Bernhard Lermann are available with signature dishes such as white asparagus veloute with seafood tortellini ,Marinated white asparagus with cured salmon and coriander Vinaigrette, Australian Veal loin with poached asparagus and saffron sabayon, roasted black cod with sautéed sweet asparagus and baby orange emulsion Vibrant asparagus paired with smooth, silky Rieslings from around the world.
