Description

Aquainting participants to the "Chinese kitchen" all the implements and Chinese ingredients. The class begins with a quick walk through the hutongs to the local market whereby using worksheets with Chinese translations we move from stall to stall explaining and identifying the vegetables - knowing which vegetables are in season and knowing which vegetables are under the organic spectrum. Time is also allocated to point out the sauces and spices, how to locate the characters for MSG on bottles and knowing the trusted brands from the "unsafe" brands. We also select a few vegetables that students personally choose to cook back at The Hutong under the experienced guidance of our Chefs. We follow a recipe list and explain cutting techniques, washing and of course cooking. Students may work with a partner in two's or work at their own cooking station, depending on numbers. Lunch is served with a selection of The Hutong Fine Teas to sample and some time is allocated to understanding and discussing food pairing according to Traditional Chinese Medicine (TCM) Concepts.
