The light and simple flavors of Zhejiang/Hangzhou cuisine can be a welcome break from the heavier Chinese regional cuisines. The beggar's chicken (jiaohua ji), a whole chicken slow-cooked basically just in its own juices and a few chestnuts and mushrooms, is good. The dongpo pork, longjing tea shrimp, drunken chicken, spicy fried duck's tongue with fried potato shreds, fried croaker with moss, and spicy pigs tails are also recommended.
