Went on a Fri. night during prime dinner hours, handful of vacant tables and nearly everyone in the place mid-30s or younger. Sat at the bar and got the wrong drink (ordered in Mandarin), no apology or attempt to fix it or "this one's on the house because we f**'d up and we know we're gonna get it back anyways because you're here with a party of 12 people and you're gonna order a ton of shi*." The food was good -- more flare than substance. Certainly not the best fusion sushi I've ever had but it seems to be one of the better fusion sushi places in town, so suppose that's saying something. Would definitely not go for traditional Japanese fare -- the sashimi platter we ordered was too cold; still tiny chunks of ice in the tuna. The tuna was not buttery or fatty, so would imagine it's mid- to high-low grade variety. The first page of the drink menu are all pretty weak drinks -- I would say they're "ladies drinks" but knowing how some of the ladies prefer something more stiff, I would just say they're passable but plenty of other places in The Village making way better cocktails. The beer selection was decent, although no local craft beer which was a bummer. The bottle of sake we ordered is not controlled by the restaurant, so no comment either way. The service was probably the biggest detractor from my experience. Waters (we had to request) arrived well after drinks; one in the party got her drink well after all the others had been served which makes doing cheers a bit tough. Wine pours were generous. Only one person was given a hand towel, yet some of the complimentary veggie dishes were missing from that one person's setting. A big booth in the back was being used by staff to fold napkins or something -- surprised to see the staff taking up this space during prime dinner hour, but again, there were plenty of empty tables. This location just had a renovation but I certainly wasn't blown away by the decor. I would take friends in dire need of a California-style sushi fix and we happened to be in the area. I would not take die hard Japanese cuisine fans, lovers of libations, or those with sashimi on their minds, or go particularly out of my way to eat here. That is, it's a restaurant among many in the Beijing scene but it's not a destination. One could do worse (and save some coin), but they could certainly do better.

I like Hatsune creative sushi, my favorites would be Butterfly, Princess roll and Caterpillar roll. Chicken terriyaki is very good but not as good as one that you can try in Koyama. Miso soup is hearty and filling. Also they always five free a small tasty snack and dessert afterward, dessert is very chinese, not sweet at all, almost without any taste.
But I must tell the service is always bad, have to wait for waitress to come for 15-20 min, when I call to reserve a table have to wait for a girl to come to the phone for 10 min just to say me that there is no tables for today, and I told time the girl who picked up the phone, but she apparently was not qualified to tell me that there is no tables.

Read good and bad reviews about this place, but I think it's mediocre. I chose to give 3 stars instead of the 4, because I wasn't completely impressed by the food for the price I paid. It wasn't a terrible meal, but nothing special. The salmon sashimi was nice but the spicy tuna hand roll was nothing really but the seasoning. The service was also ok. Go if you want to impress any visitors with the ambience and view of the kitchen staff - see them in action.

One word-Overrated. I understand that opinions vary. But I went two times recently-once for dinner, once for lunch. All who i went with thought the same, which kinda makes my opinion objective. Interior is stylish. But that's not important when it comes to food, right?

One of my favorate Sushi place. But i have to say, the location in Sanlitun is much better. Not only the food, but also the service~ i'd love to take the seats near the sushi shifu... sometimes they share a bit sushi knowledge and food~

i've been going to hatsune since 2008 and although i enjoy the sushi, the service is pretty horrible, unimpressive and inefficient.

let's talk about the food first. the sushi rolls are quite creative, eclectic and fresh. definitely represents california style sushi very well. the salads are crisp, fresh and satisfying too. i like their hot dishes too, like the grilled beef with mushrooms and garlic.

i'd give this place more stars if the service matched up to their food. my mom and i got there around 11.30am on a saturday, where there were three other tables of customers. we got our first two dishes pretty quickly. however, with the one sushi roll we ordered, it seemed like the waitstaff had no sense of urgency or concern. 30 minutes pass by after we finished both our first two dishes, and still no sushi. we asked waitress #1 what was going on and she said it was coming out soon. finally, ten minutes later, we see waitress #2 come out with it, but she leaves it at a small table and just lets it sit there. another 10 minutes later, we ask waitress #2 where our sushi is, she points to the plate of sushi that she had let sitting alone. my mom and i, EXTREMELY frustrated, say, "if it's over there, why don't you just bring it over?! why let it just sit there if you know it's ours?!"..she gives us a dumb deer in the headlights kinda look and doesn't know what to do. luckily, waitress #3 finally connects the wires in her brain together, gets the plate of sushi and rushes it over to us. so, basically, we waited more than an hour to receive ONE plate of sushi. ridiculous.

i've worked in the restaurant industry before, and one of the biggest rules is that you NEVER let customers/guests wait for more than 5-10 minutes for anything. hatsune, please train your staff better!

Great food, but rubbish service last time we went.
They've got a great range of tasty california style rolls with all kinds of interesting combinations and flavors.
On the downside, we waited ages to get a menu and they ended up forgetting one of our dishes, which is a really poor showing for such a high end place.

The only problem with Hatsune is that half the time I can’t get a table! So, make sure to call ahead. Other than that… I LOVE Hatsune. Plain and simple… The food is insane... The staff are fun and seem to enjoy their jobs… The design of both restaurants is thoughtful and creative. All this writing about Hatsune is making me hungry so I’m booking a table for lunch!

@ Chinabusiness, this is a public forum where members can share their experiences and feelings about places they have been to. What one person likes, another person may dislike, which is what makes the world such an interesting place to live, so instead of "getting mad at people saying Hatsune is not good" (as you put it) maybe you should try just accepting that not everyone shares your view, myself included. I have been back since my last review of this place and my opinion hasn't changed one tiny bit.

I love Hatsune from the very beginning of there restaurants in Beijing.
Just what do these people who criticise Hatsune expect?
It is very clear what the restaurant is, nice California sushi in a modern setting and they just won some awards for being very nice.
I just get mad at people saying the Hatsune is not good. This is one of the first international restaurants in Beijing. The owner Allan was brave enough to start something that noone was doing and now it is still good.
I also now Thank Hatsune for a very great job in original concepts and not copying anyone and they created a great place in Beijing.

Tasty food and good service. Great place for a business lunch or meeting in Sanlitun. Price is on the high end, but the tasty food deserves it. Rolls are beautifully crafted and delicious. This is a classy place for classy folk. To that end it's perfect.

Went here for lunch the other day. Nice lively atmosphere, good casual dining. The sushi was acceptable, but not as good as I had hoped. Most of the sushi was bland; maybe it's the quality of the fish in China. We had a few other dishes that were adequate, but once again not as good as I had expected. Service could be improved. One thing that really turned me off was being forced to order the moment we were seated because apparently, the kitchen closes at 2pm, after lunch. We came at 1:30 and felt a rushed and pressured. But overall, we were happy, enjoyed our meal and would definitely return.

This famous place in Beijing, I went three times.
The place is looking great, food is good but really expensive for the quantity.
We were disapointed by the service, the waitress seemed annoyed.
For a dating it must be a good place, otherwise i think it is just ok.

I expected more. I love California-style sushi--and think whatever mad genius put together cream cheese and raw fish is god. That said, Hatsune didn't quite do it for me. It was a little too mushy for my taste, actually, and some of the more creative rolls lacked. It was good, but I guess my expectations were too high...

People come here more for impressing each other rather than real food.
The food is tilted to suit western people.
Recently the food also has taken a dive for the worst. Never can see the smart boss anyway these days. The waiters are become arrogant and aggressive, pointing mistakes of customers and trying to boss the customers. You cant sit here, you cant do this. I found this attitude and got cheesed off.
Somehow the likable vibe which I had of this place has gone.

Nice decoration and attentive staffs, but I'm not that impressed with the food

Rolls on the menu sound creative and delicious. I had high hope for this. But when it's actually served I was so disappointed. The fish isn't that fresh and the rice is soggy. Ugh. Other foods are alright though.

Hatsune is my fav japanese rest... when i first came to beijing in 2005 i went to their first branch in guanghua lu.... i remember i ordered diced steak with rice and some sushi... back then there were not as many options as now and i can remember feeling so happy to have some good food... Since i moved back in 2008 i have enjoyed many many meals at Hatsune... a few birthdays and quick lunches during the week. i love their concept of having different names for the rolls and seriously who doesnt wanna order " Pimp my roll"??? i order it most times coz i love the name...eventhough it is a tad too spicy for me..... on the different occasions i have dined there i always seem to try something new and im impressed... i took a visiting friend there and she loved it... i love the fish on the ceiling and the music... its all very carefully thought out....the reception has always been polite and ive never had a booking mistake happen yet .. i do have a few criticisms though.. service sometimes is on and off...on my most recent occasion i found it difficult to get the attention of some staff as they were in a huddle of 4 talking... this was more than once...and i found it frustrating as i was trying to get the attention for more drinks and then finally to pay the bill... but those service issues are very rare... most of my dining experiences are just fine... glad to have a good japanese rest i nBeijing that i can always rely on... just a shame they dont deliver!!! :))))

Worst California rolls ever: avocado, cheap crap sticks, cucumber wrapped in nori with rice and sesame seeds - 45rmb I never got ripped off like this! This place is like xiaochi comparing to Matsuko, for instance.

I always forget how reasonably priced Hatsune is. Beers are as cheap as RMB18. A black widow roll is RMB85 (meal enough in itself). Last night had the shabu shabu (RMB80) and with that dipping sauce is was downright delicious. The fried tofu appetizer (RMB15) was also mighty fine. Two of us had a fantastic repast for RMB280 total.

Really wish I could vote lower than a star. Utterly disappointed by their food quality. Didn't understand what's all the fuss is about and how could they win so many awards for such mediocre food. Had much better fusion food than this. For better sushi and sashimi, I recommend going to Yotsuba or Naoki.

i finally got my act together and made a point to dine at this Sanlitun Hatsune. armed with high expectations, left me bored by end of the dinner. food was ok (i wasn't wowed) and service was a little messy. still, a good dining option if you are in The Village though. But for authentic Japanese food, this is not quite the place to be.

Hey Anonymous- Guess what? There is always someone who says the food is not authentic. Do you think an average Italian would recognize American pizza? Who cares if it's not that authentic? It is an American version of Japanese cuisine. And it's good.Hatsune is reasonable and cheerful and doesn't tried to be anything else. I love it.

Had lunch there today. Foods great, but service not so great. Typical problem for famous restaurant in China, once they are famous and many customers, service become a problem. Waitress don't pay much attention anymore to customer satisfaction. I ordered sushi roll, have to wait half hour, is that long making a sushi roll ? They actually forget my order.

Whenever I want Japanese, the first thing that comes to mind is Hatsune. The sashimi is always fresh, the Mot-orolla (not sure how they spell it) Roll always and consistently hits the spot. Many restaurants around town have tried imitating Hatsune's rolls, and most have not succeeded. As a native Californian, I think the proper use of avocados and crabmeat in their rolls is what creates that special flavor. What makes it even more appealing is that prices are also very reasonable for Japanese cuisine.

great service - i got a free appetizer (a tomato?) and free desert (some bad tasting coffee mousse) with my dinner (1 roll). really liked the black widow roll, and the decor of course was fabulous. pretty attentive service, check came quickly and they warned me ahead of time that the food would take awhile to get there.

also, a hint based on previous experience at the guanghua hatsune -

if you don't need to have a nice, slow romantic dinner you can finagle your way in without a reservation. just tell the waitreses that you'll eat fast and be out of there in an hour or so, before they run out of space for reservations. 3/4 times i did that last year, i got in and actually the restaurant was still not full when i left (also helps if you come early) and there wasn't that much pressure to eat fast.

Every time I go to Hatsune I feel as if there is a new type of roll on the menu. I've always had to make a reservation when trying to eat there, but a 20 second phone call to ensure a table goes a long way to enjoying a great meal.

Alan Wong is a genius. It is time for the IPO and the global expansion. I want some of this action.

This is his best yet. Hatsune moved into an even more upmarket environment. The architecture is exceptionally well done, with incredible attention to detail. It just feels alive.

The food is identical to the old location, and many a familiar staff member moved too. I had dined at the Guanghua Lu store a week or so ago, and while I loved that place, I doubt I am going back there.

Parking in the basement is a breeze. Finding the front door the first time is a challenge since he has no sign (it is next to element fresh), and once you find the door, the usual puzzle of how to open it awaits you. I am told they had to make a change to the original puzzle since no one could figure it out.

1.)there are no bathrooms, you cannot charge these prices for bathrooms that are outside!!! you cannot, not even in China. All other businesses like element fresh and blue frog have lovely bathrooms.

**halve the menu prices at this location and I will come back**

2.) there were no fapioas May 19, 2009, which means this place is probably not paying tax or does not have all of its licenture yet (another hint is the lack of a sign outside)

food is great, please go to another location of haiku or hatsune for these prices so you can go to the restroom

This sequel of Hatsune restaurants in Beijing definitely tops the last one with the location and the whole ambiance of this new one. High Floor to ceiling windows make this a great place for business dinners to all sorts of celebrations. I personally think the quality of the food here is better than the previous but you'll be the judge.

Great food, venue and location but what kind of restaurant does not have toilet facilities for their guests? Sending your guests outside to a public bathroom is not acceptable. Especially when all the other restaurants in the building (peppes, blue frog, element fresh -which are not as fancy as hatsune aims to be) have managed to install them. Very, very disappointing. Not worthy of a professional restaurateur like Alan Wong.

only in second day of operation this place has sliced up some nice sushi and sashimi.

Service was great, we sat at the sushi bar and chat up with the sushi chef, I mean samurai, while using his katana to dice up some nice rolls for us.

the place is indeed more nicely layout and have a sense of space.

the experience is the same with the other branch, so expect same exact menu, same exact service and quality.

a nice joint to stop by when in the neighborhood, will be back to challenge the samurai again :)

Another overnight success for Alan Wong. In some respects this is better than the original. High ceilings and the open layout give the dining area a sense of space and light.

The menu is similar to the original, so expect quality sashimi and of course the signature rolls. We managed to collar Mr Wong, who happened to be serving that evening, and got some recommendations from his secret menu. The gobo root hand rolls were unusual and really delicious as were the south beach rolls containing scallop and tuna.

Impeccable service combined with the amazing surroundings and a few nice touches like selecting your own chopsticks and sake glasses, made this a memorable dining experience. Will definitely be back for more.

    We have often wondered, why don’t we put yakitori sauce on everything? It’s the best kind of umami, rendering even roasted scallions palatable. Therefore the revelation that among the new items available post-renovation at Hatsune are yakitori-flavored edamame (RMB22), we knew we liked the cut of their jib. Just try to resist scraping these soft, braised pods, sprinkled with toasted sesame seeds, clean with your teeth.


    The Dream Team Roll (RMB89) is a clever combo of tempura shrimp and deep-fried burdock root that will remind Americans of potato strings (in a good way), topped by spicy salmon and a wedge of avocado. It’s rolled narrowly enough for one-bite consumption, for a great mixture of flavors and textures sweetened by a touch of unagi sauce.


    The Crustacean Sensation (RMB85) wins the prize for name and for dish that looks most likely to come to life and clamber across the table, with legs creeping towards the edge of the plate, but we found this one had slightly too much of the well-seasoned rice compared to the filling.


    The Volcano Roll (RMB85) ain’t your standard spicy roll. This gorgeous roll of tuna, pickled cucumber, egg and avocado is tempura battered and deep fried, piled into a tower and covered with salmon and flying fish roe and 119 sauce. Presented in a tower that befits the name, it tastes as good as it sounds, and is not so zesty as to put off the spice-averse. It’s easily our new favorite at Hatsune, and has us looking forward to making multiple return trips.
