Find of the Week: Wei Xiang Zhai’s Majiang Mian

Some of you already know the utter gloriousness of the noodles we’re about to feature. Those that do are already frothing at the mouth, ready for their next fix. It’s not completely uncommon. Lines bust out the door at all hours, with expectant diners filling the tight, grimy aisles psychically ushering out anyone who’s not intently focused on finishing their noodles. To say the restaurant’s outgrown its ratty space is an almost comical understatement. But, as it is in China, lines gather for a reason: Wei Xiang Zhai puts out the best majiang mian (麻酱面, RMB8) we’ve ever had.

The simple dish is prepared in-house, and whatever happens in their back room must involve some manner of black magic. Served in one big bundle, the noodles are impossibly fresh and springy; the sesame sauce is the perfect combination of creamy and peanut buttery. It’s all topped with chili oil and a scattering of chives for a bit of an extra complementary kick, and it all works together to have you slurping down your noodles and sopping up any extra sauce before your fellow diners come for you. Give them a try—we don’t know anyone who’s ever been disappointed.
