Refining the Red

Laris

"I will boldly say that this is the best beef carpaccio in China," David Laris said recently. We are inclined similarly. It's not only the exquisite tart fragrance of marinated chanterelles or the seductive aromatic truffle vinaigrette, it's also the masterful painterly-like arrangement that makes this carpaccio (YY168) the most elegant and refined of our batch.

Mesa & Manifesto

We go to Mesa even when we're not hungry simply for a dish of carpaccio, and the candle-lit atmosphere. The dish here (YY88) is rustic and supremely satisfying. The accompanying roast garlic goats cheese gratin and grilled focaccia are ideally matched to this pesto, parmesan and generous beef magnum opus.

Da Marco

When more economically inclined, we find that this carpaccio's (YY48) family size serving fits the bill. The delicate and thinly sliced beef is a bit bland on its own but the real flavor lies in the bed of greens doused in a light lemon and balsamic dressing below. Ample slices of shaved parmesan add the final touch and, when eaten in concert with the rest, is an ideal palate teaser.
