Christmas Recipe: Saffron Mashed Potatoes

For our Christmas dinner this year, we'll be preparing a show stopping roasted crown rack of lamb and a Brussels sprouts gratin that is both delicious and nutritious. To round out the meal and add a pop of color to the table, Chef Charmaine Cheung at City'Super showed us this easy recipe for saffron mashed potatoes. Check it out:

Ingredients: (Serving size: 3)



- 3 medium-sized potatoes
- .5g saffron
- 20g butter
- 1.5 tbsp. olive oil
- 1-2 tbsp. heavy whipping cream
- salt and pepper to taste


Recipe:


Step 1. Put saffron in a small bowl of warm water until yellow color comes out (around 15 minutes). Be sure the water is not too hot, since that could compromise the delicate flavor of the saffron.



Step 2. Steam potatoes for 15-20 minutes. Steaming allows the potatoes to retain their flavor better than boiling. (Helpful hint: If you do not have a steamer, you can cut the potatoes into 2x2 cubes and steam them in a wok.) Then mash the potatoes with salt, pepper, butter and olive oil.



Step 3. Finish mashing the potatoes in a pan on medium heat with saffron and warm water mixture and 1-2 tbsp. of heavy whipping cream.



Step 4. Once the potatoes have reached your desired chunkiness, add a pinch of salt and pepper and serve.



And voila! There you have it: simply delicious saffron mashed potatoes. The saffron adds a hint of something special to a classic comfort food and ensures that this dish will brighten up any holiday table. Enjoy!
