Azul Viva, a longtime staple of Shanghai's dining scene and one of restauranteur's Eduardo Vargas' first eateries in town, will soon be undergoing some major changes. Not physically of course--the place just underwent some extensive renovations last year--but they're really going to be changing things up.
Eduardo will be going back to his roots and bringing in a Peruvian chef to run the kitchen, and rebranding the restaurant with a new theme, concept and menu. The mystery chef has yet to arrive, but we're told that they're aiming for an April launch to ready themselves for the Expo.
