WE AIM TO create a cozy and relaxing Scandinavian atmosphere in here. We would like our customers to feel they are part of our restaurant, but still have privacy,” said Kevin Gu, manager of the first Peppes Pizza in China. The eatery has sparse partitions in a rustic Scandinavian decor: brick and wood, antique wooden skis and other decorations from the region are displayed throughout. Scandinavia’s largest pizza chain inaugurated in September last year, and serves mainly their famed American-style pizzas. Peculiar about quality, Peppes’ bases, sauces and marinades are made of imported spices; the sour cream is so popular it’s about to become available in supermarkets.

For City Weekend Gourmet Week, Peppes “would like to represent [Norway,] our country. With this set menu, we introduce the special Norwegian salmon to our customers,” Gu explained. The RMB99 set includes cream of mushroom soup, nine inch Norwegian salmon Italian-style pizza, and a glass of Chardonnay. The soup, an in-house recipe made especially for the local palate, is presented with mushroom granules in comfortingly creamy tang. The pizza—with generous portions of fresh Norwegian salmon, black olives, onions and oreganos—had us envying the Norwegians. The salmon is perfectly harmonized with other fresh ingredients and the crunchy crust proves to us salubrity can mean savory.
