The Boxing Cat has a new brewmaster in town working behind the scenes. Meet Michael Jordan (yes.. Michael Jordan), the Boxing Cat Brewery’s latest team member creating those perfect pints you love to drink. We caught up Michael over a few beers to find out how things are going at Shanghai's best microbrewery.

So, your name...
Yes, it's Michael Jordan. I'm the white Michael Jordan.

How did you get into the brewing business?
I brewed my first beer in '93 when I was a junior in college. It wasn't very good, but I'm pretty sure we thought it was. I was hooked pretty fast. In '96 I started at the Nor'Wester Brewery in Portland on the brewing line, then worked my way up to kegging, then to the cellar, then into the brewhouse, all in one year. I studied life sciences, so I think they appreciated that I understood the biology and chemistry of what was going on behind the scenes. Portland's a microbrew haven.

How's Shanghai shaping up?
I was in Denmark before this, and when I arrived there the culture was about 10 years behind the US. But things were developing at a very fast pace with lots of little micro-brewers. The culture here is just starting to get going and it's fun to be a part of that.

How's the beer going to change at BCB?
We've tweaked the last few batches–some were process tweaks and others were recipe tweaks, but we're also going to try and have a seasonal beer on tap all the time. We'll have a winter beer out in the middle of December. It's an English brown ale hybrid brewed with some orange peels, star anise and coffee grinds. It's going to have a Christmasy feel, flavor and aroma.
