We sat down with CaliBurger girl Candice Nunes ahead of CaliBurger's official grand opening on Jan. 26 to get all the deets on Cali's meats.

Tell us about CaliBurger.
CaliBurger is an exciting new hamburger restaurant that features fresh, made-to-order, California-style burgers! What this really means is a fantastic hamburger, made right in the restaurant (not shipped in frozen from somewhere else) from the freshest ingredients.

So a Shanghai version of In-N-Out?
In California, In-N-Out is well known for their burgers and fries. It would be cool if people thought our burgers were close to theirs. But In-N-Out has said they have no plans to expand to China, so we saw an exciting opportunity to introduce the best of California to China.

What are your signature burgers?
We’re keeping it simple. We have a CaliDouble with two meat patties, a Garden Style, your favorite burger wrapped in fresh, crisp lettuce instead of a bun, and a Wild Style with one or two mustard-cooked patties and extra Cali sauce.

Describe your dream burger.
My burger would have grilled onions, tomato and cheese, and to make it extra special, it would have a few fries with ketchup in it as well. It might sound like too much, but trust me, it would be delicious! My mouth is watering just thinking about it.

When can we see you next?
Hopefully very soon! In early 2012, look for me and the other CaliBurger Girls at our grand opening.

No questions about the In-N-Out animal style prelaunch publicity stunt, no questions about how they think they'll fare in the market here, in fact no hard (or even firmer than say, jello) questions at all. Pure promo, no reportage.
