One of my many weekend getaway options during my university days in Toronto was visiting the Niagara Falls. The waterfall itself was beautiful of course, but there’s more—it’s also where the Niagara Peninsula is, a wine region in which rare and delicious ice wines are produced (ice wines can only be made in the coolest wine regions in the world).
Healthy, frozen grapes are picked carefully by hand in the coldest days of winter. Since the water in the grapes is frozen, the remaining juice in the grapes is sweet, concentrated and almost syrupy. This makes them suitable for ice wines. The wines are still produced in the Niagara Pennisula, but Germany, Austria and other parts of Canada such as the Okanagan Valley make some now as well. Usually mildly aromatic, low in alcohol and luscious yet also refreshing, this is the ultimate sip to savor after a hearty meal in winter.
