Such an easy question! The best thing about most Asian food is that it's open to interpretation and influenced by region. I would pick Pad Thai Noodles- they can be sweet, spicy, nutty, almost any way you make 'em they're scrumptious and not boring. Second, to counter the possible spice, would be pineapple rice. The sweet and savory fruit reminds me of the beaches!

If I could only eat two Thai dishes for every meal for the rest of my life, I would be completely happy with a big plate of Pad Thai, accompanied by a bowl of chicken red curry (and rice). What more could you want? They're both adaptable to different tastes and flavors and delicious any way you prepare them.

it must b sweet, it must b sour, it must b spicy.....i would feed myself on fried bbq bananas, dip them into chili sauce and drink coconut milk with a pinch of lime all day!

The first time I had Thai food, my college roomate, who claimed to have traveled the world and affected a fake British accent, brought some back to the dorm from New York City where she had spent the weekend. It was cold and semi-congealed, but I thought that was how it was meant to be. It seemed very exotic and unusual to me, and I wasn't entirely sure I knew where Thailand was either. I had pad thai noodles with shrimp, chicken satay, shrimp crisps and fresh rolls. I thought the peanut sauce was some sort of appetizer and ate that with a spoon. We drank a 40 oz of Old English beer and watched Melrose Place and probably went to a Kurt Cobain fanclub chatroom on AOL. Those were good times. I could eat pad thai and shrimp (prawn) crisps forever and ever- cold, leftover and in their own little plastic take-away containers.

my absolute favorite things to eat at a thai food restaurant are shrimp cakes. they are so greasy and delicious that I have to make sure and get extra napkins (hope they don't charge 1rmb like bi feng tang). number two would have to be the yellow chicken curry, but only of the chicken is cut off the bone because I don't like surprises. the way yellow curry, potatoes and rice go together is just splendid and has me thinking about a hammock on a secluded beach in phuket

I’ll definitely choose the Chicken Pad Thai Noodles, I like it with chewy noodles. I like it with softer noodles. I like it doused in crushed peanuts, or just lightly sprinkled with them. I like it with cilantro, and I love it with Thai basil. Tamarind is great, and so is lime juice, but I think, best of all, is a little of both. Fish sauce–well, it always has fish sauce, but the first version I had also had oyster sauce in it, too. And Thai lettuce wraps, the veggies should be very crunchy. Meat can be a bit of salty and spicy. .

 oh, only two dishes for one meal? 
 Although not enough with so delicious food, I would have one set of different main dish or snack, with one cup of different drink or one set of soup, every meal seperately, time by time,once by once, hehe... then can   taste all of the delicious Thai cuisines...
  Jajaja... so seductive and aromatic cuisines...How to control self not to taste every set of so delicious meals?

Simply serve me a bowl of larb [pork mince with garlic, coriander and copious amounts of chillies] followed by coconut ice-cream served in a bread roll and I will be content forever and a day! I am salivating at the very thought of these tasty, tantalising, totally Thai treats!

I would have to say... 1). Horseshoe crab egg salad, which is a popular seaside dish. The eggs of the horseshoe crab, a prehistoric crab-like creature that can reach up to 50-60 cm in length, are mixed with a spicy salad of various vegetables and fruits. The eggs themselves are a little chewy and floury, but they are a good combination with the fresh and spicy salad. 2). Chicken butt (MMMMmmmm) Small pieces of meat on a stick with, guess what, a hole in the middle. You will probably not recognise it when you see it. Quite tasty but a bit chewy. Can be bought in many bbq-street stalls.

Firstly, 'Kai Kraphao' is a taste sensation and a personal favourite of mine. This is where strips of tender chicken breast are briefly marinated and then stir-fried along with an assortment of healthy seasonal vegetables in a fragrant basil sauce. Add some unseeded red chilli and make this wonderful dish as spicy as you like! I also adore 'Kaeng Ped Ped Yang'. I usually choose duck meat when I order this dish, but frequently chicken is on offer too. Added to this is a selection of vegetables - whatever is fresh and in season - such as sweet bell peppers, cherry tomatoes, eggplant, and yams or sweet potatoes. The meat and vegetables swim in a wonderful coconut based sauce infused with the usual assortment of thai flavours such as fish sauce, chilli, coriander, palm sugar and then to top it all off it is sprinkled with refreshing thai basil. A wonderful gastronomic experience, Thai style!

Well, since most everyone else is going to have Phad Thai as one of their two, I'm hoping they will share it with me (love it), so I'll choose two of my alternative favorites. First is Goong Markam (Tamarind Shrimp) and Mee Krob (a kind of crispy noodle with chicken, shrimp, and a kind of sweet sauce). Why did I choose those two... simply because I had to choose TWO out of many favorites. I fell in love with Thai food a few years ago when I went to do relief work along the coast after the Tsunami. Even in the refugee camps, everything that was made was somehow comforting and delicious under the hot summer sun (then december) even when hard work had to be had.

This is such an interesting question that I can't help leaving some comments:

Personally I would choose green papaya salad and green chicken curry with rice as 2 dishes if I can only eat them the rest of my life.

Green papaya salad is a refreshing appetizer and also offers enough vitamin with some seafood flavor. It's not straight vegetarian but it's definitely healthy. Green chicken curry is not very spicy but rather mild and smooth. Also the color of the curry is my favorite kind of creamy green so it's a comfort to my eyes too. With the combination of these 2 dishes I can live as Robinson Crusoe on a tropical island and do yoga everyday!

I like the papaya salad and the spicy catfish dish. I cant find it anywhere else since i left the states and literally, i'm craving for it (the catfish dish i mean). I choose papaya salad because it's full of vitamin, all ingredients are natural, and full of flavours, spicy, sweet, nutty, and not limited to just one vegetable. The catfish dish (i think it's called pad prik king) is extremely delicious and spicy and can be eaten alone and with rice, and not fattening. coconut milk is very filling and full of calories. this dish doesn't have any.
