Van Der Laan Rembrandt has been appointed Chef de cuisine of Allure Fine French Cuisine at Le Royal Meridien Shanghai. Pior to this, Rembrandt worked at several renowned restaurants in Paris inluding Le Jules Verne Restaurant at the Eiffel Tower, a well-known Michelin – star restaurant in Paris, and Alain Ducasse Restaurant at the Plaza Athénée, the flagship of Alain Ducasse Restaurants worldwide. Alain Ducasse is one of the most highly regarded chefs in the world. A French native, Chef Rembrandt specializes in French cuisine working with fresh seasonal produce, contemporary and creative methods. Simplicity of dishes with authentic flavors and uniquely prepared source is Rembrandt’s trademark. His cuisine blends authentic tradition and innovation throughout the seasons, composed of only the finest quality ingredients. Under his culinary direction, Chef Rembrandt intends to continue enhancing the dining experience of each guest in Allure Fine French Restaurant through featuring his signature dishes and new offerings celebrating seasonal changes.

Savory Swordfish

A short while ago we popped by ASC's Kim Crawford wine dinner hosted at Allure restaurant in Le Royal Meridien Shanghai. Having missed the chance to go to Allure several times in the past, we were excited to finally taste some of chef Michael Wendling's creations. After a few glasses of Kim Crawford Sauvignon Blanc 2007, we sat down at our assigned seat and happily awaited the first course. Set before us was an impeccable dish. Slices of roasted swordfish crusted with black olives set upon a tartar of tomato, coriander and celery with bright and enticingly fresh chopped tomatoes sprinkled on top seemed to perfectly blend simplified French cuisine with light, Mediterranean flavors. The subtle saltiness of the olives was wonderfully balanced by the tartar, the swordfish so succulent it literally melted in our mouths. Undoubtedly, the L'espadon (YY118 net) exceeded our expectations--we probably could have eaten it for every course and been content.
