    Try this Sichuan restaurant the next time you need to feed your lust for spice. Specialties here include a mouth-numbingly hot kou shui (mouth-watering) frog and "hand tear" lamb, a tower of spicy lamb rights with meat so tender it is almost falling off the bones. A contemporary interior with bright red ceiling lights, purple booths for seating and oriental screens go along with the food.

    Chinese Bite | Much More Mala

    Shanghai’s obsession with spice is well served by this large, extremely busy restaurant with black floors and hanging red lanterns. One of the few non-volcanic dishes is the cold Ningbo grilled vegetables–hearts of bokchoy infused with a robust roasted flavor. Once the kou shui frog (¥48) comes, there’s no turning back. This classic dish is properly numbingly hot, with big, juicy frog chunks. Hand Tear Lamb (手撕羊 肉,¥39) is one of the most popular dishes: a mini tower of spice-rubbed lamb ribs with meat that comes right off the bone as it tingles your taste buds. Stone Rice Bean (¥15) is similar to mapo tofu , but made using cubes of rice noodle. The red chili oil and minced cured pork bits coat the cubes with balanced mala flavors.

    Don’t skip dessert: the Snow Mei Mother (雪梅娘, ¥12) are scrumptious, chilled balls of glutinous rice skin enclosing a fluffy cream and mango filling.
